Ingredients:
6-7 strips of bacon, cut in half
12-16 oz green beans, fresh*
1 tbsp stone ground mustard
1 tsp minced garlic
1 tsp salt
1 tsp pepper
1/2 tsp lemon juice
1/2 tsp sweetener of choice**
4 tbsp olive oil
Directions:
1. Preheat oven to 450°F.
2. Bring to boil 4 quarts of water. Blanch green beans in water for 2-3 mins until bright green.
3. Drain and immediately submerge green beans in a large bowl of water with ice to stop the cooking process. Drain and dry green beans. Set aside.
4. Mix mustard, garlic, salt, pepper, lemon juice, and sweetener in a large bowl. Toss the green beans in the mixture, and set aside.
5. Line a tray with parchment paper, and set within easy reaching distance.
6. Gather together 6-7 green beans, and wrap with half a bacon strip. Place on tray with seam side down.
7. Place the tray in the oven for 15-25 mins or until bacon is crispy, and green beans are browned at the tips. Depending on the thickness of your bacon the cooking time will vary.
Enjoy with your favorite main course. These pair well with steak, or as a snack by themselves!
Note:
*Prepare the green beans by removing any stems, and the ends. Alternatively, you can buy green beans that have been prepared already. I would not attempt this with canned or frozen green beans as they tend to be cut too short, and are too soft to withstand the longer cooking process required.
**For Keto use Swerve, or monk fruit sweetener. For Paleo use maple syrup. For every one else maple syrup, Karo syrup, stevia, sugar, or honey all work well.
