Ingredients:
2 cups old fashioned oats (gluten free ok)
2 ripe or overripe bananas
2 eggs
1/2 cup plain Greek yogurt (can sub with dairy free yogurt alternative)3 tbsp honey or maple syrup
1.5 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
1/4 tsp salt
1 cup milk (or dairy free alternative)*
1/2 cup mini chocolate chips, or other ingredient of choice (optional)
2 scoops vanilla protein powder, roughly 37 ml or 2.5 tbsp (optional) [can sub chocolate or banana]
Directions:
1. Preheat oven to 375°F. In a blender, pulse together all ingredients except for chocolate chips. Blend until well combined. Stir as needed to ensure ingredients are fully mixed. Stir in the chocolate chips, if desired.
2. Pour batter into a 12-cup muffin pan lined with paper or reusable cups. (If using a silicone pan, cups are optional.) Sprinkle with the additional chips, if desired. Bake for 15-20 mins until the tops are puffed, and toothpick inserted in the center comes out clean. Allow to cool, and enjoy!
