Ingredients:
1 lb ground beef
1 lb ground pork
1/2 cup onion, finely diced
1 tbsp minced garlic
1/2 tsp oregano, dried
1/2 tsp basil, dried
1/2 tsp parsley
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp onion powder
2 eggs, large
1/2 cup breadcrumbs (gluten free ok!)
Olive oil
Directions:
1. In a large bowl mix together all the ingredients with a wooden spoon or metal utensil. Do not use your hands! The mixture needs to stay as cold as possible, and the heat from your hands will increase the temp of the meat as you work with it.
2. Line a baking sheet with parchment paper, and set aside.
3. Using cold hands scoop out 1 tsp of mixture, and roll into a ball. You want to make sure your hands are cold when rolling the meatballs. I keep a bowl of ice cold water nearby to dip my hands in as I roll the balls as I tend to run hot.
4. Place meatballs on baking sheet as you roll them. Put the meatballs in the fridge for 30 mins to an hour.
5. Preheat oven to 375°F.
6. On medium/medium-high heat sear both sides of the meatballs. Transfer back to the baking sheet, and put in the oven for about 10 minutes or until meatballs reach in internal temperature of 160°F.
7. Remove from the oven, and serve with your favorite sauce. Also tastes great on pizza!
Note: These can also be frozen to use in future meals. Try switching out the pork with veal or lamb for a unique flavor!
